Ingredients

  • 16 ounces fresh spinach
  • 1 large onion
  • 2 medium carrots
  • 1 medium zucchini
  • 5 large eggs
  • 1 cup matzo meal
  • 0.25 cup vegetable oil
  • 1.5 teaspoons salt
  • 0.5 teaspoons ground black pepper
  • 0.5 teaspoons garlic powder

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish and set it aside.

Step 2

Bring a large pot of water to a boil. Add the spinach and blanch for 1-2 minutes until wilted. Drain, squeeze out excess water, and chop finely.

Step 3

Finely dice the onion, grate the carrots, and grate the zucchini. Set the vegetables aside.

Step 4

In a large skillet, heat 2 tablespoons of vegetable oil over medium heat. Add the onion and cook for 5-7 minutes until softened and translucent.

Step 5

Add the grated carrots and zucchini to the skillet. Cook for an additional 5 minutes, stirring occasionally. Remove from heat and let cool slightly.

Step 6

In a large mixing bowl, whisk together the eggs until well-beaten. Stir in the matzo meal, the remaining vegetable oil, salt, pepper, and garlic powder.

Step 7

Add the chopped spinach and sautéed vegetables to the bowl. Mix everything together until fully combined.

Step 8

Transfer the mixture to the prepared baking dish. Spread it out evenly and press down gently with a spatula.

Step 9

Bake in the preheated oven for 40-45 minutes, or until the kugel is set and the top is golden brown.

Step 10

Remove from the oven and let cool for 10 minutes before slicing and serving.
