Ingredients

  • 2 cups Matzo farfel
  • 3 tablespoons Butter
  • 2 cups Milk
  • 2 cups Shredded cheddar cheese
  • 2 large Eggs
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 0.5 cups Parmesan cheese, grated (optional)
  • 0.5 teaspoon Paprika

Directions

Step 1

Preheat the oven to 350°F (175°C). Lightly grease a 9x9-inch baking dish or similar-sized casserole dish.

Step 2

In a medium saucepan, bring 2 cups of water to a boil. Add the matzo farfel and cook for 2-3 minutes until softened. Drain and set aside.

Step 3

In the same saucepan, melt the butter over medium heat. Stir in the milk and heat until warm but not boiling.

Step 4

Remove the saucepan from heat and gradually add 1 1/2 cups of shredded cheddar cheese, stirring until melted and smooth.

Step 5

In a medium bowl, beat the eggs. Slowly add the warm cheese sauce to the eggs, whisking constantly to avoid curdling.

Step 6

Fold the cooked matzo farfel into the cheese sauce mixture. Add salt, black pepper, and garlic powder, stirring until evenly combined.

Step 7

Pour the mixture into the prepared baking dish. Sprinkle the remaining cheddar cheese and Parmesan (if using) over the top.

Step 8

Dust the top with paprika for added color and flavor.

Step 9

Bake for 30-35 minutes, or until the casserole is golden and bubbling on top.

Step 10

Let the casserole cool for 5-10 minutes before serving. Enjoy your Passover Farfeloni and Cheese Casserole!
