Ingredients

  • 2 tablespoons Sugar
  • 0.25 teaspoons Salt
  • 0.25 cups Unsalted butter or margarine
  • 1 cup Matzo meal
  • 4 large Eggs
  • 3 cups Vegetable oil (for frying)
  • 0.25 cup Powdered sugar (optional, for dusting)

Directions

Step 1

In a medium saucepan, combine water, sugar, salt, and butter. Place over medium heat and bring to a boil, stirring until the butter is fully melted.

Step 2

Lower the heat to medium-low and stir in the matzo meal. Continue stirring until the mixture forms a smooth dough and pulls away from the sides of the pan, about 2-3 minutes. Remove from heat and let the mixture cool for 5 minutes.

Step 3

Add the eggs one at a time to the dough, beating well after each addition. The dough should become smooth and slightly sticky.

Step 4

In a large, deep skillet or heavy-bottomed pot, heat the vegetable oil over medium heat to 350°F (175°C). Use a thermometer to maintain the oil temperature as consistent as possible.
