  • 1 cup passion fruit pulp
  • 0.5 cup granulated sugar
  • 0.25 cup water
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch
  • 2 tablespoons cold water

Directions

Step 1

Cut ripe passion fruits in half and scoop out the pulp with seeds. Strain the pulp through a fine mesh sieve to collect the juice, discarding the seeds, to make 1 cup.

In a medium saucepan, combine the passion fruit juice, granulated sugar, 1/4 cup of water, and lemon juice over medium heat. Stir continuously until the sugar has dissolved.

Step 3

Bring the mixture to a gentle simmer. Lower the heat and let it simmer for about 5 minutes, stirring occasionally.

Step 4

In a small bowl, mix the cornstarch with 2 tablespoons of cold water to make a slurry.

Slowly whisk the cornstarch slurry into the simmering passion fruit mixture. Continue to stir until the sauce thickens, about 2 to 3 minutes.
