  • 100 grams Brown sugar
  • 120 milliliters Vegetable oil
  • 3 large Eggs
  • 2 teaspoons Vanilla extract
  • 150 grams Crushed pineapple (drained)
  • 120 milliliters Passion fruit pulp
  • 100 grams Grated carrot
  • 80 grams Chopped walnuts (optional)
  • 225 grams Cream cheese
  • 60 grams Unsalted butter (softened)
  • 300 grams Powdered sugar
  • 1 teaspoon Vanilla extract (for frosting)
  • 2 tablespoons Passion fruit pulp (for frosting or topping)

Directions

Step 1

Preheat your oven to 175°C (350°F). Grease and flour two 8-inch (20 cm) round cake pans, or line them with parchment paper.

In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
