Ingredients

  • 3 tablespoons olive oil
  • 1 medium yellow onion, finely diced
  • 4 cloves garlic cloves, minced
  • 56 ounces canned San Marzano tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon granulated sugar
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil
  • 0.5 teaspoons crushed red pepper flakes
  • 1 teaspoon kosher salt
  • 0.5 teaspoons freshly ground black pepper
  • 5 leaves fresh basil leaves, torn
  • 1 piece parmesan cheese rind (optional)
  • 1 cup water

Directions

Step 1

Heat the olive oil in a large, heavy-bottomed pot over medium heat.

Step 2

Add the diced yellow onion and sauté until translucent, about 5-7 minutes.

Step 3

Stir in the minced garlic and cook for an additional 1 minute until fragrant, being careful not to burn.

Step 4

Add the canned San Marzano tomatoes, including their juices. Crush the tomatoes with your hands or a wooden spoon to break them into smaller pieces.

Step 5

Stir in the tomato paste, sugar, dried oregano, dried basil, crushed red pepper flakes, kosher salt, and black pepper.

Step 6

If using, add the parmesan cheese rind for additional depth of flavor.

Step 7

Pour in the water and stir until well combined.

Step 8

Reduce the heat to low and let the sauce simmer uncovered for 75-90 minutes, stirring occasionally to prevent sticking. Adjust the consistency by adding more water if needed.

Step 9

Taste the sauce and adjust seasoning with additional salt, pepper, or sugar as desired.

Step 10

Remove the parmesan rind (if used) and discard.

Step 11

Stir in the fresh basil leaves just before serving for a burst of freshness.

Step 12

Serve hot over your favorite pasta, or use as a base for Italian dishes like lasagna or pizza.
