Ingredients

  • 0.5 cup Toor dal (pigeon peas)
  • 2 pieces Dry red chilies
  • 0.5 teaspoon Black peppercorns
  • 2 tablespoons Grated coconut (optional)
  • 1 piece Garlic clove
  • 1 piece Tamarind (small marble-sized)
  • 1 teaspoon Salt
  • 0.25 cup Water
  • 1 teaspoon Sesame oil

Directions

Step 1

Heat a pan on medium heat and add the sesame oil.

Step 2

Once the oil is hot, add the toor dal and roast it until golden and aromatic. Stir continuously to prevent burning, which should take about 4-5 minutes.

Step 3

Add the dry red chilies and black peppercorns to the pan. Roast for another 1-2 minutes until the spices are fragrant.

Step 4

Turn off the heat and let the mixture cool slightly.

Transfer the cooled dal and spices to a blender or grinder. Add grated coconut (if using), the garlic clove, tamarind, salt, and water.

Grind everything into a coarse paste. Adjust the water to reach the desired consistency, but the thogayal should be thick and not too runny.

Taste and add more salt if necessary.
