Ingredients

  • 8 pieces veal cutlets
  • 1 cup all-purpose flour
  • 1 teaspoon salt

  • 3 cloves garlic cloves, minced
  • 1 cup white wine
  • 1.5 cups chicken broth
  • 0.5 cup heavy cream
  • 2 teaspoons fresh rosemary, chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons lemon juice

Directions

Step 1

Place each veal cutlet between two sheets of plastic wrap and gently pound them with a meat mallet until they are about 1/4 inch thick.

Step 2

In a shallow bowl, combine the flour, salt, and black pepper. Dredge each veal cutlet in the flour mixture, shaking off any excess.

Step 3

In a large skillet, heat 2 tablespoons of butter and 1 tablespoon of olive oil over medium heat until the butter melts and begins to bubble.

Add the veal cutlets in batches, cooking each side for about 2 minutes or until golden brown. Remove the cooked cutlets from the skillet and place them on a plate lined with paper towels. Repeat with the remaining cutlets, adding more butter and olive oil as needed.
