Ingredients

  • 20 pieces White button mushrooms (medium-sized)
  • 2 tablespoons Olive oil
  • 3 pieces Garlic cloves (minced)
  • 1 cup Breadcrumbs
  • 8 ounces Cream cheese (softened)
  • 1 cup Parmesan cheese (grated)
  • 2 tablespoons Fresh parsley (chopped)
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.25 teaspoons Paprika

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or foil.

Step 2

Clean the mushrooms with a damp paper towel and carefully pop out the stems. Finely chop the stems and set them aside.

Step 3

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped mushroom stems and minced garlic and sauté for 3–4 minutes, until softened and fragrant. Remove from heat and let cool slightly.

Step 4

In a mixing bowl, combine the sautéed mushroom stems and garlic with breadcrumbs, cream cheese, Parmesan cheese, parsley, salt, black pepper, and paprika. Mix well until the filling is fully combined.

Step 5

Brush the mushroom caps lightly with the remaining tablespoon of olive oil and arrange them on the prepared baking sheet, cavity side up.

Step 6

Spoon the filling into each mushroom cap, packing it in gently but generously.

Step 7

Bake in the preheated oven for 20–25 minutes, or until the mushrooms are tender and the tops are golden brown.

Remove the mushrooms from the oven and let them cool for a few minutes before serving. Garnish with extra parsley if desired, and enjoy!
