Ingredients

  • 3 cups all-purpose flour
  • 0.75 cups unsalted butter (chilled and cubed)
  • 1 teaspoons salt
  • 0.5 cup cold water
  • 1 pound ground beef
  • 1 medium yellow onion (diced)
  • 2 cloves garlic (minced)
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 2 tablespoons tomato paste
  • 0.5 cup green olives (chopped)
  • 1 hard-boiled egg (chopped)
  • 1 egg (for egg wash)
  • 1 tablespoon milk (for egg wash)

Directions

Step 1

In a large bowl, mix the flour and salt. Add the chilled butter cubes, and using a pastry cutter or your fingertips, blend it into the flour until the mixture has a crumbly texture.

Step 2

Gradually add cold water, a tablespoon at a time, mixing until the dough comes together. Knead briefly to form a smooth ball, wrap in plastic wrap, and refrigerate for at least 20 minutes.

Step 3

In a skillet over medium heat, cook the ground beef until browned, breaking it into small pieces with a spatula. Drain excess fat, if necessary.

Step 4

Add the diced onion and minced garlic to the skillet. Cook for 5 minutes until the onion becomes translucent.

Step 5

Mix in the paprika, cumin, tomato paste, and chopped green olives. Stir well to combine. Cook for an additional 2–3 minutes.

Step 6

Remove the meat mixture from heat and let it cool. Stir in the chopped hard-boiled egg once the mixture is at room temperature.

Step 7

Remove the chilled dough from the refrigerator and roll it out on a floured surface to about 1/8-inch thickness. Use a 4-inch round cutter to cut circles.

Step 8

Place 1–2 tablespoons of the beef filling in the center of each dough circle. Fold the dough over to form a half-moon shape and seal the edges by pressing with a fork.

Step 9

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

Step 10

In a small bowl, whisk together the egg and milk to create the egg wash. Brush the tops of the empanadas with the mixture.

Step 11

Place the empanadas on the prepared baking sheet and bake for 20–25 minutes, or until golden brown.

Step 12

Remove from the oven and let cool slightly before serving. Enjoy your Party Empanadas warm or at room temperature!
