Ingredients

  • 500 grams parsnips
  • 2 tablespoons unsalted butter
  • 120 milliliters orange juice
  • 1 teaspoon orange zest
  • 1 tablespoon honey
  • 1 tablespoon brown sugar
  • 0.5 teaspoons ground nutmeg
  • 0.5 teaspoons salt
  • 0.25 teaspoons pepper
  • 240 milliliters water

Directions

Step 1

Peel the parsnips and cut them into evenly sized sticks or chunks, approximately 2-3 inches long and 1/2 inch thick.

Step 2

In a large skillet or saucepan, combine the water and parsnips. Bring to a boil over medium-high heat, then reduce the heat to medium and simmer for 8-10 minutes, or until the parsnips are fork-tender. Drain and set aside.

Step 3

In the same skillet, melt the butter over medium heat. Once melted, add the orange juice, orange zest, honey, brown sugar, nutmeg, salt, and pepper. Stir well to combine.

Step 4

Reduce the heat to medium-low and let the sauce simmer gently for 3-5 minutes, allowing the flavors to meld and the sauce to thicken slightly.

Step 5

Add the cooked parsnips back to the skillet, tossing gently to coat them evenly in the orange sauce.

Step 6

Continue cooking the parsnips in the sauce for another 5 minutes, stirring occasionally, until the sauce is glossy and clings to the parsnips.

Step 7

Transfer the parsnips to a serving dish, and drizzle any remaining sauce over the top. Serve warm as a side dish and enjoy!
