Ingredients

  • 500 grams parsnips
  • 200 grams potatoes
  • 30 grams unsalted butter
  • 50 ml heavy cream
  • 50 grams grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 50 grams all-purpose flour
  • 2 large eggs
  • 100 grams breadcrumbs
  • 500 ml vegetable oil

Directions

Step 1

Peel the parsnips and potatoes. Cut them into chunks and boil them in a large pot of salted water for about 15-20 minutes, or until tender.

Step 2

Drain the cooked parsnips and potatoes, then return them to the pot. Add the butter and mash until smooth.

Step 3

Stir in the heavy cream, Parmesan cheese, parsley, salt, and black pepper. Mix well and let the mixture cool to room temperature.

Step 4

Using your hands, shape the cooled mixture into small cylindrical croquettes, about 5-6 cm long. Chill in the fridge for 15-20 minutes to firm up.

Set up a breading station: place the flour on one plate, beat the eggs in a shallow bowl, and spread the breadcrumbs on another plate.

Roll each croquette in the flour, dip it into the egg, and coat completely in breadcrumbs. Repeat for all croquettes.
