Directions

Step 1

Peel the parsnips and chop them into small chunks. Cut the broccoli into florets. Set aside.

Dice the onion and mince the garlic cloves.

In a large soup pot, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until softened.
