Directions

Step 1

Peel the potatoes and carrots, then dice them into small, uniform cubes (about 1/2-inch thick) to ensure even cooking.

Step 2

Finely chop the onion and mince the garlic. Roughly chop the fresh parsley and set it aside for garnish.

Bring a medium pot of salted water to a boil. Add the diced potatoes and carrots, and boil for 5–6 minutes, or until they are just fork-tender but not fully cooked. Drain and set aside.
