Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon granulated sugar
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter (cold, cubed)
  • 2 tablespoons fresh parsley (chopped)
  • 2 tablespoons fresh chives (chopped)
  • 0.75 cup buttermilk
  • 1 large egg (for egg wash)
  • 1 tablespoon water (for egg wash)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, baking powder, sugar, and salt until well combined.

Step 3

Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingertips, cut the butter into the flour mixture until it resembles coarse crumbs.

Step 4

Stir in the chopped parsley and chives, ensuring they are evenly distributed throughout the mixture.

Step 5

Make a well in the center of the dry mixture and pour in the buttermilk. Gently stir just until the dough comes together; do not overmix.

Step 6

Turn the dough out onto a lightly floured surface and gently knead it a few times to bring it into a cohesive ball.

Step 7

Pat the dough into a disc about 1-inch thick and 8 inches in diameter. Use a sharp knife or a biscuit cutter to cut the dough into 8 equal wedges or rounds.

Step 8

Place the scones on the prepared baking sheet, spacing them about 2 inches apart.

Step 9

In a small bowl, beat the egg with 1 tablespoon of water to create an egg wash. Brush the tops of the scones with the egg wash for a golden finish.

Step 10

Bake in the preheated oven for 15-18 minutes, or until the scones are golden brown and puffed.

Step 11

Remove the scones from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. Serve warm or at room temperature.
