Ingredients

  • 4 medium-sized zucchini
  • 2 tablespoons olive oil
  • 1 cup grated Parmesan cheese
  • 0.5 cup bread crumbs (panko or regular)
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian seasoning
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone baking mat.

Step 2

Wash the zucchinis thoroughly and trim off the ends. Slice each zucchini in half lengthwise, then cut each half into spears (about 4-6 spears per half, depending on the zucchini's size).

Step 3

In a large mixing bowl, drizzle the zucchini spears with olive oil and toss to coat evenly.

Step 4

In a separate bowl, combine the grated Parmesan cheese, bread crumbs, garlic powder, Italian seasoning, salt, black pepper, and optional red pepper flakes. Mix well.

Step 5

Working one at a time, press each zucchini spear into the Parmesan mixture, coating all sides generously with the mixture. Place the coated spears on the prepared baking sheet in a single layer.

Step 6

Bake in the preheated oven for 18-20 minutes, or until the zucchini is tender and the Parmesan coating is golden and crispy.

Step 7

Remove from the oven and let cool slightly. If desired, garnish with fresh parsley before serving.

Step 8

Serve warm and enjoy!
