Ingredients

  • 1 cup Parmesan cheese
  • 1 cup All-purpose flour
  • 0.5 cup Unsalted butter (cold, cubed)
  • 1 Egg yolk
  • 2 tablespoons Ice water
  • 0.25 teaspoon Salt
  • 1 teaspoon Fresh rosemary (optional, finely chopped)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.

Step 2

In a food processor, combine the Parmesan cheese, all-purpose flour, and salt. Pulse a few times to combine.

Step 3

Add the cold, cubed butter and pulse until the mixture resembles coarse sand.

Step 4

Add the egg yolk and 1 tablespoon of ice water. Pulse until the dough just starts to come together. Add the remaining 1 tablespoon of ice water if the dough feels too dry.

Step 5

Transfer the dough onto a lightly floured surface and gently knead it until it forms a smooth ball.

Wrap the dough ball in plastic wrap and refrigerate for 15 minutes to chill.

Once chilled, roll out the dough to about 1/4-inch thickness on a floured surface.

Use star-shaped cookie cutters (or any other shape of your choice) to cut out shapes from the dough, and carefully transfer them to the prepared baking sheets.
