Ingredients

  • 500 grams Fresh spinach leaves
  • 2 pieces Large eggs
  • 100 grams Parmesan cheese, grated
  • 60 grams Panko breadcrumbs
  • 2 cloves Garlic, minced
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Ground black pepper
  • 0.5 teaspoon Salt
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your oven to 190°C (375°F) and lightly grease a muffin tin or line it with silicone muffin cups.

Step 2

Wash the spinach thoroughly, remove the stems, and sauté it in a large skillet over medium heat with the olive oil until wilted, about 2-3 minutes.

Step 3

Once cooled, transfer the spinach to a clean kitchen towel and squeeze out as much excess water as possible. Chop the spinach finely and place it in a mixing bowl.

Step 4

In the same bowl, add the eggs, grated Parmesan cheese, panko breadcrumbs, minced garlic, dried oregano, salt, and ground black pepper. Mix thoroughly until the ingredients are well combined.

Step 5

Scoop the mixture evenly into the prepared muffin tin, pressing down gently to pack it tightly.

Step 6

Bake in the preheated oven for 15-20 minutes, or until the edges turn golden brown and the cakes firm up.

Step 7

Allow the spinach cakes to rest for 5 minutes before carefully removing them from the tin.

Step 8

Serve warm as a side dish, appetizer, or snack. Optionally, garnish with extra Parmesan or serve with a dipping sauce.
