Ingredients

  • 4 large Russet potatoes
  • 3 tablespoons Unsalted butter
  • 1 medium Yellow onion
  • 3 cloves Garlic cloves
  • 4 cups Chicken or vegetable broth
  • 1 cup Heavy cream
  • 1 cup Grated Parmesan cheese
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Peel and dice the potatoes into 1-inch cubes. Set aside.

Step 2

Finely chop the yellow onion and mince the garlic cloves.

In a large pot, melt the butter over medium heat. Add the chopped onion and cook for 5-7 minutes, stirring occasionally, until the onion is soft and translucent.
