  • 1 cup whole milk
  • 3 large eggs
  • 2 tablespoons unsalted butter (melted)
  • 1 cup Parmesan cheese (grated)
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon black pepper (optional, freshly ground)
  • 0 cooking spray or additional butter

Directions

Step 1

Preheat your oven to 450°F (230°C). Place a standard muffin pan or popover pan in the oven to preheat as well.

Step 2

In a medium mixing bowl, whisk together the flour, milk, eggs, melted butter, salt, and black pepper until smooth and no lumps remain. The batter should have a consistency similar to heavy cream.

Step 3

Fold in 3/4 cup of the grated Parmesan cheese, reserving 1/4 cup for topping later.

Step 4

Remove the hot muffin or popover pan from the oven and quickly grease each cup with cooking spray or a small amount of melted butter to prevent sticking.

Step 5

Fill each cup in the prepared pan halfway with the batter. Avoid overfilling to ensure they puff properly.
