Ingredients

  • 3 cups Self-raising flour
  • 1 cup Parmesan cheese, grated
  • 0.33 cup Pine nuts, toasted
  • 4 slices Prosciutto, chopped
  • 1 teaspoon Salt
  • 50 grams Cold butter, cubed
  • 1 cup Milk
  • 0.25 cup Water

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.

Step 2

In a large mixing bowl, combine the self-raising flour, grated Parmesan cheese, toasted pine nuts, chopped prosciutto, and salt.

Step 3

Add the cubed butter to the dry ingredients. Using your fingertips, rub the butter into the flour mixture until it resembles breadcrumbs.

Step 4

Create a well in the center of the mixture and pour in the milk and water. Using a wooden spoon, gently stir until the dough starts to come together.

Step 5

Turn the dough out onto a floured surface and knead lightly for about 1-2 minutes, just until it is smooth. Be careful not to overwork the dough.

Step 6

Shape the dough into a round loaf, about 4-5 cm (1.5-2 inches) thick, and place it on the prepared baking tray.

Step 7

Using a sharp knife, score a shallow cross into the top of the dough to allow it to expand while baking.

Step 8

Bake in the preheated oven for 25-30 minutes, or until the damper is golden brown and sounds hollow when tapped on the bottom.

Step 9

Allow the damper to cool slightly before slicing. Serve warm or at room temperature with butter or your favorite dipping oil.
