Ingredients

  • 12 oz spaghetti or fettuccine
  • 4 tbsp unsalted butter
  • 0.5 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic (minced)
  • 1 tsp salt
  • 0.5 tsp cracked black pepper
  • 2 tbsp parsley (chopped, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Step 2

In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for 1-2 minutes, or until fragrant and slightly golden.

Step 3

Stir in the heavy cream and cook for 1-2 minutes until warmed through. Be careful not to let it boil.

Step 4

Lower the heat and gradually whisk in the grated Parmesan cheese until it has melted and formed a smooth sauce.

Season the sauce with salt and black pepper, tasting to adjust as needed.

Add the cooked pasta to the skillet, tossing to coat it evenly in the sauce. If the sauce is too thick, use the reserved pasta water, a tablespoon at a time, to loosen it to your desired consistency.
