Ingredients

  • 4 pieces Trout fillets
  • 3 ounces Parmesan cheese
  • 1 cup Panko breadcrumbs
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 large Eggs
  • 0.5 cup All-purpose flour
  • 3 tablespoons Olive oil
  • 4 pieces Lemon wedges, for serving

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Grate the Parmesan cheese finely and combine it with the Panko breadcrumbs, chopped parsley, garlic powder, paprika, salt, and black pepper in a shallow bowl. Mix well.

Step 3

In a separate bowl, beat the eggs. Place the all-purpose flour in a third shallow dish.

Step 4

Pat the trout fillets dry with a paper towel and lightly season with a pinch of salt and pepper.

Step 5

Dredge each fillet in the flour, shaking off any excess. Dip the fillet into the egg mixture, ensuring it is completely coated, then press it into the Parmesan and breadcrumb mixture. Make sure the crust adheres evenly to the fish.

Step 6

Heat the olive oil in a large non-stick skillet over medium heat. Place the crusted trout fillets in the skillet, crust-side down. Cook for 2–3 minutes or until golden brown, then gently flip and cook for another 2 minutes on the other side.

Step 7

Transfer the seared fillets to the prepared baking sheet, crust-side up, and finish cooking in the preheated oven for 5–7 minutes, depending on the thickness of the fillets.

Step 8

Remove from the oven and let rest for 2 minutes. Serve hot with lemon wedges on the side for a fresh citrus kick.
