  • 2 large Eggs
  • 0.5 cup All-purpose flour
  • 1 cup Panko breadcrumbs
  • 0.5 cup Grated Parmesan cheese
  • 3 tablespoons Olive oil
  • 2 cups Cherry tomatoes, halved
  • 0.5 cup Fresh basil leaves, chopped
  • 2 tablespoons Balsamic vinegar
  • 2 tablespoons Extra virgin olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Place the chicken breasts between two sheets of parchment paper or plastic wrap and pound them with a meat mallet until evenly thick (about 1/2 inch).

Season both sides of the chicken with 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of garlic powder.
