Ingredients

  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 small yellow onion, finely chopped
  • 2 cups carrots, grated
  • 1 cup arborio rice
  • 0.5 cup dry white wine
  • 4 cups vegetable stock, warmed
  • 0.75 cup Parmesan cheese, finely grated
  • 2 tablespoons fresh parsley, finely chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper, freshly ground

Directions

Step 1

Heat 1 tablespoon of butter and the olive oil in a large skillet or saucepan over medium heat.

Step 2

Add the finely chopped onion and sauté until softened and translucent, about 3 minutes.

Step 3

Stir in the grated carrots and cook for another 3-4 minutes until slightly softened.

Step 4

Add the arborio rice to the pan and stir for 1-2 minutes, ensuring the rice is well-coated and lightly toasted.
