Ingredients

  • 6 pieces large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon white vinegar
  • 0.25 teaspoon salt
  • 0.125 teaspoon black pepper
  • 0.25 teaspoon paprika
  • 2 tablespoons fresh chives (optional, for garnish)

Directions

Step 1

Place the eggs in a single layer in a large saucepan and cover them with cold water, ensuring there is about 1 inch of water above the eggs.

Step 2

Bring the water to a boil over medium-high heat. Once the water begins to boil, turn off the heat, cover the saucepan, and let the eggs sit for 10 minutes.

Step 3

While the eggs are resting, prepare a large bowl of ice water. Once the 10 minutes are up, transfer the eggs to the ice water bath and let them cool for at least 5 minutes.

Step 4

Carefully peel the eggs and slice them in half lengthwise. Gently scoop the yolks into a medium mixing bowl, being careful not to tear the egg whites.

Step 5

Mash the yolks with a fork until they are finely crumbled. Add the mayonnaise, Dijon mustard, white vinegar, salt, and black pepper. Mix until smooth and well combined.

Step 6

Spoon or pipe the yolk mixture back into the egg white halves, dividing it evenly among the 12 halves.

Step 7

Sprinkle the tops with paprika and garnish with finely chopped chives, if desired.

Step 8

Chill the deviled eggs in the refrigerator for at least 30 minutes before serving for best flavor.
