Ingredients

  • 2 pounds Beef stew meat, cubed
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 0.25 cup All-purpose flour
  • 1 large Yellow onion, diced
  • 4 cloves Garlic, minced
  • 4 cups Beef broth
  • 1 cup Red wine (optional)
  • 2 tablespoons Tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 Bay leaves
  • 4 medium Carrots, sliced into thick rounds
  • 3 medium Potatoes, cubed
  • 2 stalks Celery, sliced
  • 1 cup Frozen peas
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.

Step 2

Season the beef cubes with salt and pepper, then lightly coat them in flour.

Step 3

Work in batches if necessary, searing the beef cubes in the hot oil until browned on all sides. Remove the beef and set aside.

Step 4

In the same pot, reduce the heat to medium and add the diced onion. Cook until softened, about 5 minutes.

Step 5

Add the minced garlic and cook for an additional minute until fragrant.

Step 6

Pour in the beef broth and red wine (if using), scraping the bottom of the pot to deglaze and release the browned bits.

Step 7

Stir in the tomato paste and Worcestershire sauce, then add the bay leaves.

Step 8

Return the seared beef to the pot. Cover and simmer on low heat for 1 hour to tenderize the meat.

Step 9

After 1 hour, add the carrots, potatoes, and celery. Cover and continue cooking until the vegetables are tender, about 45 minutes.

Step 10

Stir in the frozen peas during the final 10 minutes of cooking to heat through.

Step 11

Remove the bay leaves, taste, and adjust seasoning if needed.

Step 12

Serve hot, garnished with fresh parsley if desired. Pair the stew with crusty bread for a complete meal.
