Ingredients

  • 1 pound Large shrimp, peeled and deveined
  • 1 cup Buttermilk
  • 1 cup All-purpose flour
  • 0.5 cup Cornstarch
  • 1 teaspoon Cayenne pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 cups Vegetable oil
  • 0.5 cup Mayonnaise
  • 0.25 cup Thai sweet chili sauce
  • 2 tablespoons Sriracha sauce
  • 1 tablespoon Honey
  • 2 stalks Green onions, thinly sliced

Directions

Step 1

In a medium bowl, pour the buttermilk over the shrimp and let it marinate for 15 minutes while you prepare the other ingredients.

Step 2

In a shallow dish, whisk together the all-purpose flour, cornstarch, cayenne pepper, garlic powder, paprika, salt, and black pepper to create the dry coating mixture.

Step 3

In another bowl, combine the mayonnaise, Thai sweet chili sauce, Sriracha sauce, and honey to make the fire sauce. Set aside.

Step 4

Heat the vegetable oil in a deep skillet or heavy-bottomed pot over medium heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

Step 5

Remove the shrimp from the buttermilk, allowing excess to drip off, then coat each shrimp thoroughly in the flour mixture. Shake off any excess flour.

Step 6

Fry the shrimp in batches (5-6 at a time) for 2-3 minutes or until golden brown and crispy. Avoid overcrowding the pan.

Step 7

Using a slotted spoon, transfer the cooked shrimp to a paper towel-lined plate to remove excess oil.

Step 8

Once all the shrimp are fried, toss them in the prepared fire sauce until evenly coated.

Step 9

Serve immediately, garnished with sliced green onions and additional sauce on the side for dipping, if desired.
