Ingredients

  • 1 pound boneless, skinless chicken thighs
  • 2 tablespoons cornstarch
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 0.75 cup unsalted cashews
  • 2 pieces garlic cloves, minced
  • 1 teaspoon ginger, minced
  • 1 medium red bell pepper, diced
  • 2 cups broccoli florets
  • 3 stalks scallions, sliced
  • 3 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey
  • 1 teaspoon sesame oil
  • 1 teaspoon sambal oelek (chili paste)
  • 4 cups cooked jasmine rice

Directions

Step 1

Cut the chicken thighs into bite-sized pieces and transfer to a bowl. Toss them with 1 tablespoon of soy sauce and 2 tablespoons of cornstarch until evenly coated. Set aside to marinate while preparing the other ingredients.

Step 2

In a small bowl, whisk together hoisin sauce, rice vinegar, honey, sesame oil, sambal oelek, and the remaining 1 tablespoon of soy sauce. Set aside for later use.

Step 3

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken in a single layer and cook for 4-5 minutes, stirring occasionally, until browned and fully cooked. Transfer the chicken to a plate and set aside.

Step 4

In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the cashews and toast for 1-2 minutes until slightly golden and fragrant. Remove the cashews and set them aside.

Return the skillet to medium-high heat and add the minced garlic, ginger, red bell pepper, and broccoli. Stir-fry for 4-5 minutes until the vegetables are tender but still crisp. If needed, add 1-2 tablespoons of water to help steam the broccoli and prevent sticking.

Return the cooked chicken to the skillet, along with the toasted cashews. Pour the prepared sauce over the top and toss everything together until evenly coated. Cook for an additional 2-3 minutes to heat through.

Remove from heat and garnish the dish with sliced scallions.
