Ingredients

  • 600 grams Yukon Gold potatoes (or similar waxy variety)
  • 30 grams Unsalted butter
  • 2 tablespoons Olive oil
  • 2 cloves Garlic cloves (crushed lightly with skins on)
  • 3 sprigs Fresh thyme sprigs
  • 2 tablespoons Fresh parsley (chopped, for garnish)
  • 1 teaspoon Salt
  • 0.5 teaspoons Freshly ground black pepper

Directions

Step 1

Wash the potatoes thoroughly and peel them if desired. Using a Parisienne scoop (melon baller), carve out small, uniform spheres from the potatoes and place them in cold water to prevent browning.

Step 2

Bring a medium pot of salted water to a boil. Add the potato spheres and blanch them for 4-5 minutes until they are slightly tender but still hold their shape. Drain the potatoes and pat them dry with a clean kitchen towel.

Step 3

In a large, heavy-bottomed skillet, heat the olive oil on medium heat. Add the butter and let it melt until it begins to foam.

Step 4

Add the blanched potato spheres to the skillet in a single layer. Cook them for 15-20 minutes, turning occasionally, until they are golden brown and crispy on all sides.
