Ingredients

  • 1.5 kg Yukon Gold potatoes
  • 250 g Unsalted butter
  • 250 ml Heavy cream
  • 2 tsp Salt
  • 2 L Cold water

Directions

Step 1

Peel the Yukon Gold potatoes and cut them into evenly sized chunks, approximately 5 cm in diameter, to ensure even cooking.

Step 2

Fill a large pot with 2 liters of cold water and add 1 teaspoon of salt. Place the potatoes in the pot and bring to a boil over high heat.

Step 3

Reduce the heat to medium and simmer the potatoes for 20-25 minutes, or until they are fork-tender and easily mashable.

Step 4

While the potatoes are cooking, heat the heavy cream in a small saucepan over medium-low heat until warm, then set it aside.

Step 5

Once the potatoes are cooked, drain them thoroughly and return them to the pot. Place the pot over low heat and let the residual moisture evaporate for about 1-2 minutes.

Pass the potatoes through a potato ricer or a food mill into a large bowl for an ultra-smooth texture.
