  • 0.5 teaspoons sea salt
  • 0.25 teaspoons freshly ground black pepper
  • 1 handful microgreens or fresh herbs for garnish
  • 200 grams crackers or toasted baguette slices (optional, for serving)

Directions

Step 1

Dice the salmon and tuna into small, uniform cubes (about 5mm in size). Place each fish in separate bowls.

To the bowl of salmon, add half of the minced shallot, 1 tablespoon of chopped chives, 1 teaspoon of lime juice, 1 tablespoon of olive oil, 1/4 teaspoon of sea salt, and a pinch of black pepper. Gently mix to combine and set aside.

To the bowl of tuna, add the remaining minced shallot, 1 tablespoon of chopped chives, 1 teaspoon of lime juice, 1 tablespoon of olive oil, 1/4 teaspoon of sea salt, and a pinch of black pepper. Gently mix to combine and set aside.

Using a small ring mold (approximately 6-8 cm in diameter), begin layering the parfait on a serving plate. Start by adding the salmon tartare as the first layer and press it gently to ensure evenness.
