Ingredients

  • 4 medium Yukon Gold potatoes
  • 3 cloves Garlic
  • 3 tablespoons Olive oil
  • 2 teaspoons Fresh thyme leaves
  • 2 sprigs Fresh rosemary
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 sheets Parchment paper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Peel and thinly slice the Yukon Gold potatoes into rounds approximately 1/8-inch thick. Use a mandoline for uniform slices, if available.

Step 3

Mince the garlic cloves and set them aside.

Step 4

In a large mixing bowl, combine the potato slices, minced garlic, olive oil, thyme leaves, salt, and black pepper. Toss the ingredients until the potatoes are evenly coated in the seasoning.

Cut two large sheets of parchment paper, each approximately 12x16 inches in size.

Divide the seasoned potato mixture evenly between the two parchment paper sheets. Spread the potatoes into a flat, even layer, leaving a 2-inch border around the edges.

Place one sprig of rosemary on top of each portion of potatoes.

Fold the parchment paper over the potatoes, creating a packet. Starting at one corner, fold and crimp the edges tightly to seal the packet completely.
