Ingredients

  • 400 grams cooked black beans (drained and rinsed)
  • 120 grams breadcrumbs
  • 100 grams crushed pineapple (drained)
  • 50 grams red onion (finely chopped)
  • 20 grams cilantro (finely chopped)
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon chili powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 large egg (or flaxseed egg for vegan option, 1 tbsp flaxseed meal + 2.5 tbsp water)
  • 2 tablespoons olive oil
  • 4 pieces burger buns
  • 4 pieces lettuce leaves
  • 4 pieces sliced tomato
  • 4 pieces sliced red onion (optional)
  • 0 to taste favorite burger condiments (ketchup, mayo, etc.)

Directions

Step 1

In a large mixing bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving a few chunks for texture.

Step 2

Add breadcrumbs, crushed pineapple, red onion, cilantro, ground cumin, smoked paprika, chili powder, salt, black pepper, and the egg (or flaxseed egg for vegan option). Mix until well combined.

Step 3

Form the mixture into 4 evenly sized patties and set them aside. If the mixture feels too wet, add a small amount of breadcrumbs until it holds its shape.

Step 4

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the patties to the skillet and cook for 4-5 minutes on each side, or until they are golden brown and heated through.

Step 5

While the patties are cooking, lightly toast the burger buns in the oven or on another skillet for added texture and flavor.

Step 6

Assemble the burgers: Start by placing a lettuce leaf on the bottom half of each bun, followed by a bean patty, a slice of tomato, a slice of red onion (if using), and your favorite burger condiments. Top with the other half of the bun.

Step 7

Serve immediately and enjoy your Paradise Island Bean Burgers with a side of fries, sweet potato wedges, or a light salad.
