Ingredients

  • 1 cup unsalted butter
  • 0.5 cup granulated sugar
  • 0.75 cup brown sugar (packed)
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup shredded sweetened coconut
  • 1.25 cups white chocolate chips
  • 0.75 cup chopped macadamia nuts

Directions

Step 1

Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a large mixing bowl, beat the unsalted butter, granulated sugar, and brown sugar together until the mixture is creamy and light in color, about 2-3 minutes.

Step 3

Add the eggs and vanilla extract to the bowl, then beat until fully incorporated.

Step 4

In a separate medium bowl, whisk together the all-purpose flour, baking soda, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix the dough.

Step 6

Fold in the shredded coconut, white chocolate chips, and chopped macadamia nuts using a rubber spatula or wooden spoon.

Step 7

Using a cookie scoop or tablespoon, portion out the dough onto the prepared baking sheets, spacing each cookie about 2 inches apart.

Step 8

Bake the cookies in the preheated oven for 9-11 minutes, or until the edges are lightly golden but the centers are still soft. Do not overbake.

Step 9

Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Serve the Paradise Cookies warm or at room temperature. Store leftovers in an airtight container for up to 1 week.
