Ingredients

  • 4 large Russet potatoes
  • 1 medium Yellow onion
  • 3 Garlic cloves
  • 2 tablespoons Smoked paprika
  • 1 tablespoon Sweet paprika
  • 2 cups Vegetable stock
  • 3 tablespoons Olive oil
  • 0.5 cup Sour cream
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley

Directions

Step 1

Peel and chop the potatoes into evenly sized 1-inch cubes, then rinse them under cold water to remove excess starch.

Step 2

Peel and finely dice the onion. Mince the garlic cloves.

Step 3

Heat the olive oil in a large deep skillet or Dutch oven over medium heat.

Step 4

Add the diced onion to the skillet and sauté for 5 minutes or until soft and translucent.

Step 5

Stir in the minced garlic and cook for 1 minute, being careful not to burn it.

Step 6

Add the smoked paprika and sweet paprika to the skillet, stirring for 30 seconds to toast the spices and release their aroma.

Step 7

Pour in the vegetable stock and bring it to a boil.

Step 8

Add the cubed potatoes to the skillet, along with the salt and pepper. Stir well to coat the potatoes in the sauce.

Step 9

Lower the heat to a simmer, cover the skillet, and cook for 25 minutes, stirring occasionally, until the potatoes are tender and the sauce has thickened slightly.

Step 10

Remove the skillet from the heat and stir in the sour cream until fully incorporated. Taste and adjust seasoning if needed.

Step 11

Garnish with freshly chopped parsley and serve warm as a side dish or with crusty bread for a complete meal.
