Ingredients

  • 6 pieces Roma tomatoes
  • 2 pieces Jalapeño peppers
  • 1 medium Yellow onion
  • 2 pieces Garlic cloves
  • 0.5 cup Fresh cilantro
  • 2 tablespoons Lime juice
  • 0.5 teaspoon Ground cumin
  • 1 teaspoon Salt
  • 1 14-ounce can Canned fire-roasted tomatoes
  • 1 tablespoon Vegetable oil

Directions

Step 1

Preheat your broiler to high.

Step 2

Line a baking sheet with aluminum foil. Place the Roma tomatoes, jalapeño peppers, garlic cloves (unpeeled), and the yellow onion (peeled and quartered) on the sheet.

Step 3

Drizzle the vegetables with the vegetable oil and toss to coat evenly.

Step 4

Broil the vegetables for 8-10 minutes, turning halfway through, until they are nicely charred on all sides.

Step 5

Remove the vegetables from the oven and allow them to cool slightly. Peel the garlic cloves and remove the seeds from the jalapeños if you prefer less heat.

Step 6

In a blender or food processor, combine the broiled vegetables, canned fire-roasted tomatoes, fresh cilantro, lime juice, ground cumin, and salt.

Step 7

Blend until the salsa reaches your desired consistency (smooth or slightly chunky). Adjust seasoning to taste if necessary.

Step 8

Transfer the salsa to a bowl and let it rest for at least 30 minutes to allow the flavors to meld together. Serve with tortilla chips or use as a topping for tacos, burritos, or any Mexican-inspired dish!
