Ingredients

  • 1 pound Skirt steak
  • 2 large Chicken breasts
  • 1 pound Large shrimp (peeled and deveined)
  • 4 tablespoons Olive oil
  • 3 tablespoons Lime juice
  • 4 minced Garlic cloves
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 3 large Bell peppers (mixed colors, sliced)
  • 1 large Onion (sliced)
  • 2 tablespoons Fresh cilantro (chopped)
  • 8 large Flour tortillas
  • 1 cup Sour cream
  • 1 cup Guacamole
  • 1 cup Pico de gallo
  • 2 tablespoons Butter

Directions

Step 1

In a large bowl, combine olive oil, lime juice, garlic, chili powder, cumin, paprika, salt, and black pepper to create a marinade.

Step 2

Add the skirt steak, chicken breasts, and shrimp to the marinade. Toss to coat completely, cover, and refrigerate for at least 30 minutes (or up to 4 hours for deeper flavor).

Step 3

Preheat your grill or grill pan to medium-high heat. If using a grill, lightly oil the grates to prevent sticking.

Step 4

Grill the steak for 4-5 minutes per side, or until it reaches your preferred level of doneness. Remove from the grill and let rest for 5 minutes before slicing.

Step 5

Grill the chicken for approximately 5-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove and let rest.

Step 6

Thread the shrimp onto skewers (if desired, for easier grilling), and grill for 2-3 minutes per side, or until pink and opaque. Remove from heat.

Step 7

In a large skillet, melt butter over medium-high heat. Add sliced bell peppers and onions, and sauté for 5-7 minutes until they are tender and slightly caramelized. Sprinkle with chopped cilantro.

Step 8

Warm the flour tortillas on the grill or in a dry skillet for about 30 seconds per side.

Step 9

Slice the grilled chicken and steak into thin strips.

Step 10

Serve the grilled steak, chicken, and shrimp on a large platter alongside the sautéed vegetables, warmed tortillas, sour cream, guacamole, and pico de gallo. Let everyone assemble their own fajitas!
