Bring a large pot of salted water to a boil. Cook the pappardelle according to package instructions until al dente. Reserve 1 cup of pasta water before draining the pasta. Set both aside.
While the pasta is cooking, season both sides of the chicken breast with salt and black pepper. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
Add the chicken breast to the skillet and cook for 5-6 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and let it rest on a cutting board.
