Ingredients

  • 0.5 pound Shrimp (peeled and deveined)
  • 0.5 pound Fresh oysters (shucked)
  • 3 tablespoons Butter (unsalted)
  • 2 tablespoons Blackening seasoning
  • 3 cloves Garlic (minced)
  • 1 medium Yellow onion (finely diced)
  • 1 medium Green bell pepper (finely diced)
  • 2 cups Heavy cream
  • 1 cup Monterey Jack cheese (shredded)
  • 0.5 cup Parmesan cheese (grated)
  • 2 tablespoons Fresh parsley (chopped)
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon Lemon juice
  • 1 loaf French bread (for serving)

Directions

Step 1

Heat a large skillet over medium-high heat. Melt 1 tablespoon of butter in the skillet.

Step 2

Toss the shrimp and oysters in the blackening seasoning to coat evenly.

Step 3

Add the shrimp and oysters to the skillet and cook for 2-3 minutes per side until lightly blackened and just cooked through. Remove from skillet and set aside.

Step 4

In the same skillet, add the remaining 2 tablespoons of butter and lower the heat to medium.

Step 5

Stir in the minced garlic, diced onion, and bell pepper. Cook until the vegetables are softened, about 5 minutes.

Step 6

Slowly pour in the heavy cream and bring to a gentle simmer. Let it reduce slightly, about 3-4 minutes.

Step 7

Stir in the shredded Monterey Jack cheese and grated Parmesan cheese one handful at a time, allowing the cheese to melt completely before adding more. Stir continuously to prevent clumps.

Step 8

Season the mixture with Cajun seasoning, Worcestershire sauce, and lemon juice. Mix well.

Step 9

Return the cooked shrimp and oysters to the skillet, stirring them into the cheese mixture. Let everything heat through for about 2 minutes.

Step 10

Sprinkle the chopped parsley over the top and serve the blackened oyster and shrimp fondue immediately with slices of warm French bread for dipping.
