  • 500 g green beans, trimmed
  • 80 ml olive oil

  • 4 medium ripe tomatoes, grated or finely chopped
  • 1 tbsp tomato paste
  • 250 ml water or vegetable stock
  • 2 tbsp fresh parsley, chopped
  • 1 tsp dried oregano
  • 1 tsp salt
  • 0.5 tsp freshly ground black pepper
  • 2 medium potatoes (optional), peeled and quartered

Directions

Step 1

Heat the olive oil in a large, deep skillet or pot over medium heat.

Step 2

Add the chopped onion and sauté for 5-7 minutes, stirring occasionally, until softened and translucent.

Step 3

Add the minced garlic and sauté for an additional 1 minute until fragrant.

Step 4

Stir in the grated or chopped tomatoes and the tomato paste. Cook for 2-3 minutes until the tomatoes have softened and the mixture begins to thicken.

Pour in the water or vegetable stock and stir to combine.

Add the green beans (and potatoes, if using) to the pot. Make sure they are mostly submerged in the sauce. Add more water if necessary.
