Ingredients

  • 2 cups (diced) Ripe papaya
  • 1 cup (diced) Ripe mango
  • 0.5 cup (finely chopped) Red onion
  • 1 tablespoon (grated) Fresh ginger
  • 2 cloves (minced) Garlic
  • 0.25 cup Brown sugar
  • 0.5 cup Apple cider vinegar
  • 2 tablespoons Lime juice
  • 0.25 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground cumin
  • 0.5 teaspoon Red chili flakes
  • 0.5 teaspoon Salt
  • 0.25 cup Water
  • 2 tablespoons (chopped, optional for garnish) Fresh cilantro

Directions

Step 1

Peel and dice the papaya and mango into small, bite-sized pieces. Finely chop the red onion, grate the ginger, and mince the garlic.

Step 2

In a medium-sized saucepan, combine the diced papaya, diced mango, red onion, grated ginger, and minced garlic.

Step 3

Add the brown sugar, apple cider vinegar, lime juice, ground cinnamon, ground cumin, red chili flakes, salt, and water to the pan. Stir well to combine all the ingredients.

Step 4

Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring occasionally.

Step 5

Once boiling, reduce the heat to low and let the mixture simmer uncovered for about 20-25 minutes, stirring occasionally. The chutney should thicken and the fruits should soften as they cook.

Step 6

Taste the chutney and adjust seasoning, adding more salt, sugar, or lime juice, if desired. For extra heat, you can increase the red chili flakes.

Step 7

Once the chutney reaches your desired consistency, remove it from the heat and let it cool to room temperature.

Step 8

Transfer the chutney to a clean jar or airtight container. Store in the refrigerator for up to 2 weeks.

Step 9

Optional: Garnish with freshly chopped cilantro before serving.
