Ingredients

  • 500 grams Green papaya (peeled, deseeded, and cubed)
  • 200 ml Coconut milk
  • 1 medium Onion (finely chopped)
  • 1 medium Tomato (finely chopped)
  • 3 cloves Garlic cloves (minced)
  • 1 teaspoon Ginger (grated)
  • 1 whole Green chili (slit)
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Red chili powder
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Mustard seeds
  • 8 leaves Curry leaves
  • 3 tablespoons Fresh cilantro leaves (chopped, for garnish)
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Salt
  • 250 ml Water

Directions

Step 1

Heat the vegetable oil in a large pan over medium heat.

Step 2

Add the mustard seeds and let them sputter for about 30 seconds.

Step 3

Stir in the curry leaves, minced garlic, grated ginger, and green chili. Sauté for 1-2 minutes until fragrant.

Step 4

Add the chopped onion and cook until translucent, about 5 minutes.

Mix in the chopped tomato and cook until softened, about 3-4 minutes.

Add the turmeric powder, coriander powder, red chili powder, and ground cumin. Stir well for 1-2 minutes to toast the spices.
