Ingredients

  • 2 cups (peeled, deseeded, and diced) Ripe papaya
  • 2 cups (peeled and diced) Ripe mango
  • 2 cups Granulated sugar
  • 2 tablespoons Lemon juice
  • 0.5 cups Water

Directions

Step 1

Peel and deseed the papaya, then dice it into small cubes. Do the same for the mangoes.

Step 2

In a large, heavy-bottomed pot, combine the diced papaya, diced mango, granulated sugar, lemon juice, and water.

Step 3

Place the pot over medium heat and stir to combine all the ingredients.

Step 4

Bring the mixture to a boil, then reduce the heat to low and let it simmer. Stir occasionally to prevent sticking and burning.

Step 5

After about 20 minutes, use a potato masher or an immersion blender to break down the fruit mixture into a smoother consistency, if desired.

Step 6

Continue to simmer for another 10 minutes, stirring frequently, until the jam thickens. You can test the consistency by placing a small spoonful of jam on a chilled plate. If it sets and wrinkles when pushed with your finger, the jam is ready.

Step 7

Remove the pot from heat and let the jam cool slightly.

Step 8

Transfer the jam to sterilized jars, leaving about 1/4 inch of space at the top. Seal the jars tightly and let them cool completely before storing.

Step 9

Store in the refrigerator for up to 3 weeks or process in a water bath for longer shelf life.
