  • 4 cups Vegetable oil

Directions

Step 1

Peel the Russet potatoes using a vegetable peeler. Rinse them under cold water to remove any dirt and excess starch.

Cut the potatoes into strips about 1/4 inch wide. To achieve uniform slices, first cut the potato in half lengthwise, then lay the flat side on the cutting board for stability.

Step 3

Place the cut potato strips in a large bowl of cold water. Let them soak for at least 15 minutes. This helps remove excess starch, which ensures crispy fries.

Step 4

Drain the potatoes and pat them dry thoroughly using paper towels. Make sure to remove as much moisture as possible to prevent oil splatters during frying.

Step 5

In a deep frying pan or Dutch oven, heat the vegetable oil to 325°F (163°C) using a kitchen thermometer to check the temperature.

Carefully add the potato strips into the hot oil in small batches to avoid overcrowding, which can lower the oil temperature. Fry them for about 5 minutes until they start to turn a slight golden color but are still soft.
