Peel the Russet potatoes using a vegetable peeler. Rinse them under cold water to remove any dirt and excess starch.
Cut the potatoes into strips about 1/4 inch wide. To achieve uniform slices, first cut the potato in half lengthwise, then lay the flat side on the cutting board for stability.
Place the cut potato strips in a large bowl of cold water. Let them soak for at least 15 minutes. This helps remove excess starch, which ensures crispy fries.
Drain the potatoes and pat them dry thoroughly using paper towels. Make sure to remove as much moisture as possible to prevent oil splatters during frying.
In a deep frying pan or Dutch oven, heat the vegetable oil to 325°F (163°C) using a kitchen thermometer to check the temperature.
Carefully add the potato strips into the hot oil in small batches to avoid overcrowding, which can lower the oil temperature. Fry them for about 5 minutes until they start to turn a slight golden color but are still soft.
Remove the fries from the oil using a slotted spoon and place them on a paper towel-lined baking sheet to drain. Repeat with the remaining potatoes.
Once all the potatoes have been fried once, increase the oil temperature to 375°F (190°C). Return the fries to the hot oil in batches, frying them for an additional 3-4 minutes until they are crisp and golden brown.
Remove the fries from the fryer and again place them on a fresh paper towel-lined baking sheet to drain excess oil.
While still hot, sprinkle the fries with salt to taste. Serve immediately for the best flavor and crunch.
