Peel and dice the potatoes into bite-sized cubes (about 1/2 inch). Rinse under cold water and set aside.
Finely dice the onion and mince the garlic cloves.
Heat a large skillet over medium heat and add 1 tablespoon of vegetable oil. Once hot, add the chorizo and cook, breaking it up into small crumbles with a wooden spoon, for 5-7 minutes or until fully cooked. Remove the chorizo from the skillet and set aside on a plate lined with paper towels to drain excess fat. Leave about 1 tablespoon of rendered fat in the skillet.
Add the remaining 1 tablespoon of vegetable oil to the skillet and turn the heat to medium-high. Add the diced potatoes and sprinkle with salt and black pepper. Cook for 10-12 minutes, stirring occasionally, until the potatoes are golden and crispy on the outside and tender inside.
Lower the heat to medium and stir in the diced onion. Cook for 3-4 minutes or until the onion softens and becomes translucent. Add the minced garlic and cook for another 30 seconds until fragrant.
Return the cooked chorizo to the skillet and stir to combine with the potatoes and onion mixture. Cook for another 2-3 minutes to heat everything through.
Taste and adjust seasoning, adding more salt or pepper if needed. If desired, sprinkle fresh chopped cilantro over the top before serving.
Serve warm as-is or use it as a filling for tacos, burritos, or breakfast bowls. Optionally, garnish with lime wedges for a zesty finish.
