  • 8 oz Chorizo sausage
  • 2 medium Russet potatoes
  • 8 Eggs

  • 2 tbsp Fresh cilantro
  • 0.5 cup Cheddar cheese, shredded

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Peel and dice the russet potatoes into small, bite-sized cubes. Finely chop the white onion and mince the garlic cloves.

Step 3

Heat 1 tablespoon of olive oil in a large, oven-safe skillet over medium heat. Add the diced potatoes and cook for 8-10 minutes, stirring occasionally, until they are golden and tender. Transfer the potatoes to a plate and set aside.
