  • 12 pieces lasagna noodles
  • 2 tablespoons olive oil
  • 3 cloves garlic
  • 16 ounces fresh spinach
  • 15 ounces ricotta cheese
  • 3 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 large egg
  • 4 cups marinara sauce
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Bring a large pot of salted water to a boil. Cook the lasagna noodles according to package instructions until al dente. Drain and lay the noodles flat on a clean kitchen towel to prevent sticking.

Step 3

Heat the olive oil in a large skillet over medium heat. Mince the garlic and sauté for 1-2 minutes until fragrant. Add the fresh spinach to the skillet and cook until wilted. Season with a pinch of salt and pepper. Remove from heat and set aside to cool slightly.

In a mixing bowl, combine the ricotta cheese, 1 cup of shredded mozzarella, 1/2 cup of grated Parmesan, the egg, and the cooked spinach. Stir well and season with salt, pepper, oregano, and basil.

Repeat the layering process (noodles, spinach-ricotta mixture, marinara, mozzarella) two more times, finishing with the remaining cup of marinara sauce and sprinkling the top with the last cup of shredded mozzarella and the remaining 1/2 cup of Parmesan cheese.

Step 8

Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 40 minutes.

Step 9

After 40 minutes, remove the foil and bake for an additional 15 minutes until the cheese on top is golden and bubbly.

Step 10
