Ingredients

  • 4 large ripe tomatoes
  • 2 tablespoons olive oil
  • 1 yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 250 grams ground beef
  • 1 cup cooked white rice
  • 2 tablespoons parsley, chopped
  • 1 teaspoon oregano, dried
  • 1 cup parmesan cheese, grated
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup breadcrumbs

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Slice the tops off the tomatoes and carefully scoop out the pulp and seeds to create a hollow cavity. Reserve the pulp for later use.

Step 3

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and cook until soft, about 3-4 minutes.

Add the minced garlic to the skillet and cook for another 1 minute until fragrant.

Increase the heat to medium-high and add the ground beef. Cook the beef until browned and fully cooked, breaking it apart with a spoon, about 5-7 minutes.

Stir in the reserved tomato pulp, cooked rice, chopped parsley, dried oregano, salt, and black pepper. Cook for 2 minutes to combine the flavors.
