Ingredients

  • 3 large russet potatoes
  • 6 slices bacon
  • 6 large eggs
  • 2 medium bell peppers (assorted colors)
  • 1 medium yellow onion
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons chopped parsley (optional for garnish)

Directions

Step 1

Peel the russet potatoes and dice them into small, bite-sized cubes.

Step 2

Dice the bell peppers and yellow onion into small pieces, and set them aside.

Step 3

In a large skillet over medium heat, cook the bacon until crispy. Once done, remove the bacon from the pan and place it on a paper towel-lined plate to drain. Leave 1 tablespoon of the bacon grease in the skillet.

Add 1 tablespoon of olive oil to the skillet. Toss in the diced potatoes and cook them on medium heat, stirring occasionally, until they are golden and crispy (about 10-12 minutes).

Push the potatoes to one side of the skillet. Add another tablespoon of olive oil to the other side, then sauté the diced bell peppers and onion until softened (about 4-5 minutes). Mix the potatoes and veggies together in the skillet, and season with 1 teaspoon of salt and 1 teaspoon of black pepper.
